Delight From the 1960s
Puran Ji Kachori was established in 1963 when Puran Poswal, formerly a confectioner, came to Jaipur with the desire to start his own business. He noticed that asafoetida (hing) was not commonly used in kachoris in Jaipur. This sparked the idea for Hing Kachori, leading to the opening of his shop. Over time, the unique aroma and flavour of the kachoris attracted crowds, and the shop became immensely popular.
No Chutney, Just Pure Magic of Tadka
Govind Poswal shares that his grandfather chose not to serve any chutney with the kachori, preserving its original flavour. Later, they experimented with curd and chutney, which became well-loved additions. The tadka, made from mogar dal, asafoetida, black pepper, cloves, and some secret spices, remains unchanged to this day. The consistent taste of each kachori is ensured by perfect roasting and a balanced blend of spices.
Still a Morning Favourite
Even today, a crowd gathers at the shop every morning. Along with hing kachori, they also serve onion kachori and dry kachori. The dry kachori, which stays fresh for 15–20 days, is especially in demand and even receives orders from abroad.
Special Kachori Now Costs Rs 20
While the price of Puran Ji’s Hing Kachori was once less than Re 1, today the special version with curd is sold for Rs 20.
Interestingly, many loyal local customers have been enjoying these kachoris daily for the past 20–25 years. Tourists visiting Jaipur also make it a point to indulge in this spicy delicacy.
